Vietnam is limestone karst standing out of green water, terraced rice on northern hillsides, and lanterns strung across old town streets. Conical hats in the fields, ochre french colonial shutters going green with damp, motorbikes in numbers that have to be seen, and coffee served strong over condensed milk. The colour is jade, ochre and lantern gold. Pho is eaten for breakfast and the broth is simmered overnight. Coffee here is grown on the highlands and the country is second only to Brazil.
